I moved my family(Emily, MJ and Logan)to McCall in 2001. We fell in love with
McCall the first time we visited. I have had the pleasure of working at a few
restaurants and bars in McCall. Outside the restaurant business I have worked
as a territory manger for 2 different industrial supply firms. When my wife and I
heard about the City golf course restaurant lease coming available we knew it
would be the perfect avenue for us to be a solid part of the community.
As a family we are excited for the opportunity to put our skills to work to
benefit our great town. We own our house in McCall and have no plans leaving
McCall. With my past restaurant and bar experience here in McCall and
California, I am confident that we will be able to hire and train local staff to
service our golfers and visitors. The city has done a great job keeping the facility
in good working order. With a reasonable lease and terms there is some room
to update the seating and facility in time with city approval. We will offer a
menu to support the needs of all year round.
We thank you for the opportunity to present our ideas for a great family
friendly restaurant. We are excited to be able to provide this great service to
McCall.

Managing McCall City golf course Bar and grill. Providing quality service,food and drink for golf course customers
and year round Bar and Grill for residents and visitors to the City of McCall.
Objectives
To provide excellent service to the customer utilizing the Golf facilities and grow business within the non-golfing
community. Offering good food and drink along with excellent service to grow sales and profit for the Bar and
Grill.
Mission Statement
Our Mission is to provide a Family friendly environment. We will offer good food at a great value in a timely and
efficient manner. Our management team will focus on our customers and team members to grow the bond
between the two. We are delighted to serve our future customers and their families,they add to the environment
of the Course and the City of McCall. We will strive to move forward with new ideas and technology to keep in
step with market and growth plans.
Keys to Success
Service is the key to a successful restaurant,along with environment quality food and drinks at a good cost while
maintaining cost and profit.
Year round Bar and Grill to service the community of McCall Idaho. Providing great food in a timely manner at a
good price. We will have the ability to support Golf Course events and utilize the facility for banquet events.

Interior
McCall City Golf course bar and grill is great operational order. Changes can be made to make the
restaurant a friendlier atmosphere. These changes can be made in time and per city approval.
Hours of Operation
Hours of operation need to be consistent with the hours customers need our services. Summer and
winter hours may be different.
Products and Services
Having a consistent menu is extremely important to have a successful restaurant. A golf course brings in a
very diverse group of customers,we are planning on a simple menu that will meet the needs of everyone.
Appetizers,sandwiches,salads and dinner entrees and breakfast during golf season along with a full bar
for adults over 21.
Suppliers
Our local food and beverage supplies are a major key to success. Growing relationships with the suppliers
is a must.
Service
Our service realize on a management staff that knows the local area and has relationships with local and
non-local service industry staff. Employing local staff that has adequate housing and transportation is a
goal to secure the service needed to give our customers a great experience to come back and enjoy the
McCall Golf course time and time again.
Management
Management will start with Eric Hovland. The goal would be to have a full time Chef/Cook to run "the
back of the house". Eric Hovland will run "the front of the house"with 20 years of restaurant and bar
experience I will be able to hire bartenders and servers to take care of day to day service and prep.
Financial Management
Having years of experience in the restaurant and bar industry we are able to utilize the services of our

distributors to maximize profit and cost of our products.
Managing our food cost, beverage cost and payroll will be run by a skilled accountant and quick books
expert.
Marketing
McCall has many options for Marketing and advertising, local radio, news print,social media,chamber of
commerce. 1 would also like to make a push in the surrounding areas to show new management and year
round operation.

• 5 year Lease(Lease terms to be discussed on Thursday July 27th)
• Year round operation to support Golf Course and other customers
• Lease to begin when Golf course opens in 2018. Restaurant and Bar will open
in 2017 to hire and train staff,finalize menu, and prepare for winter
carnival/2018 golf season.
• First option to renew lease after 5 years

City of McCall
I am writing this letter to refer Eric Hovland for the position to manage the McCall City
golf course restaurant. He would be the perfect candidate for the job, I have witnessed
his excellent service provided at restaurants throughout McCall.
I have known Eric for the past six years and we have been good friends since then. I can
confidently vouch for him as a professional and honest person. When I heard about the
lease coming up for the restaurant Eric was the first person I thought of. The service he
can provide for our community would be excellent.
Eric and his family would be a great fit for the restaurant. They have lived in McCall for
